Restaurants & Food Processing Industry

Any business that discharges fats, oils and grease (FOG) must connect ALL kitchen fixtures to a Grease Interceptor (GI). Kitchen fixtures include sinks, floor drains, dishwashers, etc. GISs must be properly maintained and are subject to inspection by City inspectors.  Below are documents that further detail requirements for controlling FOG discharges.
