Restaurants & Food Processing Industry
Any business that discharges fats, oils and grease (FOG) must connect ALL kitchen fixtures to a Grease Interceptor (GI). Kitchen fixtures include sinks, floor drains, dishwashers, etc. GISs must be properly maintained and are subject to inspection by City inspectors.
